While I understand and appreciate your sentiments, would it not be
possible to design the course with assignments that can only be
accomplished by getting outdoors? You have the potential to reach many
more students on-line than would ever be able to attend your classes in
person.
Particularly if these are non-credit classes, you can emphasize at the
outset that students will only be cheating themselves if they skimp on the
outdoor component, and should reflect on why they want to take the class
before signing up.
